Takayama to Nagoya

National Route 41.

I've never ridden it but I've driven it. Generally, national routes (国道) are rather busy with trucks and other commercial traffic, except on Sundays and public holidays. There are some short tunnels that are unavoidable, but the long tunnels can be detoured-around. For cycling, where there is an alternative parallel road it's likely to have more local flavor and less traffic (but possibly more traffic lights) than the main drag.
 
It's an old site, but jcn shows a routing between Takayama and Gifu by way of Shirakawago:

Certainly longer than on route 41, and on the Gifu end you'll have to improvise to get into Nagoya.

Zoom in on 41 out of Takayama and you'll see some smaller roads that might be alternatives.
 
Thank you for the information. Although turning 67, I am still an avid solo bicycle tourist. The train ride from Nagoya to Takayama is beautiful, and I prefer to ride through small towns. Going from Takayama towards Nagoya seems more hill friendly.
